This is by far one of our favorite summer dishes. Did i mention it also might be the easiest? So refreshing and tasty you will want this to be incorporated into your meal plan all summer long!
Equal parts diced or balled tomato (any variety) and fresh watermelon (seedless is best)
A couple springs of mint
Salt & Pepper
Red Wine Vinegar
Olive Oil
Dice fruit and combine in a bowl. Chiffonade some fresh mint and incorporate with salt and pepper. (Salt really brings out the flavor, so don't be afraid to use it!) Pour about 1 T of vinegar over the mixture and 1/2 T olive oil. Let sit before serving. Enjoy!
